Gluten Free Chocolate Cake Mix

Now here’s a CHOCOLATE cake! A flavorful favorite for those who don't even need to eat gluten free. For chocolate lovers, add gluten-free chocolate chips to your own homemade fudge icing. Or, mix 1 tablespoon of cocoa powder with ½ cup confectioner’s sugar, stir to blend, then place a paper doily on top of the cake and gently sift the combo on top. Carefully remove the doily to reveal a subtle pattern on your cake.

  1. Place contents of bag into mixing bowl.
  2. Add 3 large eggs.
  3. Add ½ cup (4 oz.) softened butter or margarine.
  4. Add ¾ cup (8 oz.) water.
  5. Mix for 30 seconds at slow speed, scrape down bowl then mix for 2 min. at medium speed.
  6. Place into a 12x8x1 (1/4 sheet pan) or a 9x9x2 inch cake pan.
  7. Bake for 30 minutes at 350˚ for 12x8 or 40 minutes for 9x9.

*NOTE:  For high altitude add 1 tsp. corn starch.
